Here's how we go about it, and the mistakes we see most often.
In the morning, really?
This is the first surprise for most people: we set up in the morning, not the evening. Three very practical reasons.
First, the beach is quiet. Between 9am and 11am you have the space to yourselves, whereas everyone is out in the evening. Second, the light: the lagoon is translucent in the morning and the photos need no editing. Third, the heat — a lunch in full sun at 1pm is pleasant for nobody, while a 9:30am brunch is perfect.
Above all, it frees up the day. Candles in the morning, and the whole afternoon is still yours for the beach, the lagoon or a well-earned nap.
Choosing the spot for your group
- As a couple — Pointe aux Canonniers or a quiet corner of Trou aux Biches. Privacy first.
- Family with children — Mont Choisy: space, shade under the filao trees, shallow water.
- With friends — Pereybère or Grand Baie, livelier and handy if the day continues afterwards.
We always scout beforehand based on the day's tide: at high tide some stretches of beach shrink considerably, and a table set in the wrong place ends up three metres from the water.
The cake: the classic mistake
The instinct is to bring a cake bought the day before. In the Mauritian climate, buttercream or whipped cream won't survive an hour in the sun, even in the shade.
What holds up: layer cakes with a stable frosting, kept cool until the last moment and brought out just before serving. That's exactly why we offer the custom layer cake as an add-on — made to be served on location, with the name and colours you want.
Timing the candles
Not at the start (nobody's settled), not at the end (attention has dropped). The moment is after the savoury courses, when everyone is relaxed. We bring the cake then, discreetly, from behind.
Styling that survives the wind
On a beach, anything light takes off: paper napkins, badly weighted balloons, confetti. Confetti in particular should be avoided — impossible to collect, it stays in the sand long after you leave.
What holds: weighted linen, solid crockery, a compact bouquet of fresh flowers, standing lanterns. The rest of the decoration is the lagoon — and it needs no help from anyone.

Pulling off the surprise
For a surprise birthday, the hard part isn't the set-up — it's getting the person to the right place at the right time without them working it out.
Cover stories that work: a morning walk "because the weather's lovely", a "quick" breakfast before an errand, or an invented appointment nearby. Always build in fifteen minutes of margin: we're in place before you arrive, not while you're arriving.
One last tip: tell them to dress nicely. Nothing is more frustrating than beautiful photos where you feel underdressed.
